"Windows cannot access the specified device, path, or file" error in Windows after mounting in Ubuntu 21.04

I installed Ubuntu a few weeks ago to dual boot and mounted the base windows partition in ubuntu to be able to read and write to it as I need. I did tweak the power settings in Windows to turn off fast boot as part of that process. Now when I try to start most things in windows, I get the following:

Windows cannot access the specified device, path, or file.
You may not have the appropriate permissions to access the item.

I've looked up this message, but no one has posted anything that has helped for this scenario. I've already tried to set my user folder in Properties/Security as fully accessible, even adding my user account to the list and that hasn't changed anything. Additionally, I unmounted the Windows partition in Ubuntu, as well set it to not automount to see if that could help. I also changed back the fast boot setting.

I'd really like not to have to reinstall Windows to get past this, but I don't know what options I have left. I bought this laptop in Jan of this year.

Apps that work: Firefox, Chrome, Outlook, Visual Paradigm, MS SQL Management Studio, Visual Studio, IIS, MYSQL Workbench, Adobe Reader, Audacity, Solidworks (opens, need to activate due to student license), MS Office(Word, Excel), GIMP, PYCharm, Openshot, WAMP Server, Kodi

Apps that result in the message above: MS Teams, VS Code, Discord, SourceTree, Postman, Anydesk, Any installer exe I download to install (EXT2FSD, anaconda)
